Tabbouleh or the Perfect Salad

If you have already made acquaintance with the Lebanese cuisine, you should have tried by now the famous salad named tabbule or tabbouleh (no matter the script, it is pronounced tabulé). If you have never tasted a tabbouleh salad, you should know it is one of the most appreciated mezze which contains a lot of parsley, crushed tomatoes, bulgur, olive oil and lemon juice.

It is true that in the Romanian cuisine parsley is rarely used and only to savor some dishes, but you should know that parsley contains more vitamin C than lemons, oranges and cabbage, plus vitamins A, B1, B2, B3, B5, B6, B9, K and E. it is also an important source of carbohydrates, proteins, minerals (potassium, calcium, phosphorus, magnesium, iron, sodium), essential oil, fat and flavonoids.

Vitamins A and C ensures a powerful antioxidant, detoxification, anti-allergic, antitumor effect; it tones the liver, stimulates the gallbladder, fluidizes secretions, it’s antispasmodic, relaxes smooth muscle stomach bowel and bronchitis, strengthens the immune system, has a vasodilatory effect, regenerates vascular wall, maintains the elasticity of vessels, has aphrodisiac effects and ensure smooth functioning of genital apparatus.

Parsley also limits the inflammatory processes and neutralizes the effects of tobacco, alcohol, excessive meat eating or processed food poisoning and contains volatile oils with antitumor effect. Not to mention that it eliminates bad breath!

On the other hand, we should not forget that tomatoes is an excellent source of vitamin A, C, K, folic acid and potassium. These vegetables naturally contain small amounts of sodium, saturated fat, cholesterol or calories.

The delicious bulgur is also beneficial to the body. Bulgur is a wheat grain mixture. Although bulgur can contain several types of wheat, hard wheat is the basic one, and in Romania it is known as the ghirca. It has a content of fiber, proteins and vitamins higher than rice and has a low glycemic index. Bulgur is a good source of magnesium (an essential mineral for proper functioning of the brain and nerves).
